Ingredients

  • 500g flour 
  • 10g fresh yeast or 6g baker's yeast 
  • 400ml water 
  • 10g salt  
  • 1 tbsp sugar 
  • olive oil 
  • Rosemary 

    Preparation

    1. Put the flour, crumbled yeast, sugar and 350ml of water in a bowl 
    2. Mix with a large spoon 
    3. Add 2 tablespoons of olive oil and the salt 
    4. Using a large spoon, fold the edges of the dough towards the center 
    5. Cover and leave to rise at room temperature for 30min 
    6. Still using a large spoon, gently fold the edges of the dough towards the center.  
    7. Cover and leave to rise for another hour 
    8. Put a little olive oil on your hands, and knead the dough lightly. Always fold the sides towards the center. 
    9. Put some olive oil on a baking tray. Place the dough on top and fold the dough over itself. Put a little olive oil on top. 
    10. Cover and leave to rise for 40 minutes. 
    11. Put a little oil on your hands and press your fingers into the focaccia to create small holes. 
    12. Sprinkle with rosemary 
    13. Bake for 12 to 15 minutes at 250°c
