Ingredients

  • 1 bag of quinoa 
  • 1 courgette 
  • 1 pepper 
  • cherry tomatoes 
  • 1 aubergine  
  • Feta cheese  
  • Olive oil  
  • salt and pepper  
  • 1 bunch of mint 

                  Preparation

                  1. Preheat the oven to 180°c. 
                  2. Wash and chop the vegetables, place them in an ovenproof dish and drizzle with olive oil. Mix. Bake for 30 minutes. 
                  3. During this time, cook the quinoa as indicated on the packet. Set aside in a cool place after cooking. 
                  4. Put the quinoa in a bowl, add the grilled vegetables and crumble the feta cheese. Season with salt and pepper. Add the olive oil. 
                  5. Mix and chop a little mint.
