Baked turkey, potatoes, carrots, mushrooms and cranberry sauce

- 1 turkey
- 6 potatoes
- 5 carrots
- 250g mushrooms
- Olive oil
- Salt and pepper
- 250g dried cranberries (sauce)
- 100ml broth (for the sauce)
- 1 cup water (for the sauce)
- 1 tablespoon of sugar (for the sauce)

Recipe
Preheat the oven to 200°C
Brush the chicken with olive oil and season with salt and pepper. Place the turkey in the casserole dish.
Wash and peel the potatoes and carrots ( keep the peelings to make a future broth or vegetable chips - if you use organic vegetables).
Wash and chop the mushrooms (keep the stems to make a velouté).
Add the vegetables to the casserole. Add a little oil. Close the lid and bake for 1 hour.
Meanwhile, prepare the cranberry sauce. Place the dried cranberries, stock and water in a saucepan and simmer until until the cranberries are tender.
Add the spoonful of sugar and simmer for 5 minutes.
