Lemon and Poppy Seed Loaf
This timeless classic is always a hit with family and friends and plays nicely with
the traditional shape of our rectangular loaf tin. With its subtle mix of tangy
flavours and crunchy poppy seeds, this cake is perfect for any occasion, from a
laid-back brunch to a festive evening.
The recipe:
1. Preheat your oven to 180°C.
2. In a mixing bowl, combine 200g of flour, 150g of sugar, a teaspoon of baking powder, a pinch of salt, and 2 tablespoons of poppy seeds.
3. Add 3 eggs one by one, then 100g of melted butter and the zest of 2 lemons.
4. Pour the batter into your greased and floured Pyrex® loaf tin.
5. Bake in the oven for 45-50 minutes or until a knife inserted in the middle of the loaf comes out clean.
6. Let the cake cool before taking it out of the tin, and enjoy!
Classic Meatloaf
There’s nothing quite like traditional meatloaf for a heartwarming meal. Prepare your version using your favourite meats and seasoning, then bake it in a Pyrex® loaf tin for even cooking and the perfect balance of flavours.
The recipe:
1. Preheat your oven to 180°C.
2. In a mixing bowl, combine 500g of ground meat, 1 minced onion, 2 minced garlic cloves, 1 egg, 50g of breadcrumbs, 2 tablespoons of mustard, salt and pepper.
3. Keep mixing until evenly combined.
4. Transfer the preparation into your greased Pyrex® loaf tin.
5. Bake for 45-50 minutes or until the meatloaf is golden and cooked through.
6. Leave to stand for a few minutes before slicing and serving.
Mediterranean Vegetable Terrine
For a lighter but no less delicious option, try this Mediterranean vegetable terrine.
Chock-full of colourful veggies and flavourful herbs, this terrine is a versatile dish that can be served hot or cold, as a starter or as a main dish.
The recipe:
1. Preheat your oven to 200°C.
2. Slice 2 courgettes, 2 red peppers, and 1 aubergine into long slices to resemble lasagna noodles.
3. Lay flat on a baking tray, drizzle some olive oil and roast before leaving to cool.
4. In a small saucepan, add 2 garlic cloves, minced, 2 tablespoons of olive oil, and 2 large tomatoes, chopped. Add mixed herbs and a little salt, and cook down to a chunky sauce.
5. In your Pyrex® loaf tin, arrange a layer of roasted peppers on the bottom, add a layer of tomato sauce, a layer of courgettes, another layer of sauce, a layer of
aubergines, and repeat until you run out.
6. Cover and refrigerate overnight.
7. Serve cold or reheat in the oven for 15-20 minutes before serving.
