Start with 1.2kg of potatoes, roughly the same size so they cook evenly. Peel and cut them uniformly, then rinse well to get rid of excess starch. Pat them completely dry—this is crucial. If you’ve got time, soak them in cold water for half an hour in a sealable storage container first, which removes even more starch and makes them extra crispy.

Pop your chips into the Pyrex® air fryer dish. Drizzle over 2 tablespoons of groundnut oil (it’s got a mild flavour and handles high heat brilliantly), then toss everything together until well coated. Don’t season with salt yet—that comes after cooking.
