Air Fryer Chicken Breast Recipe: Seasonal Vegetables with Sweet and Sour Sauce
Here’s a light, easy little recipe that’s perfect for summer and sunny days. Mild and fragrant, this chicken breast with vegetables and sweet and sour sauce will go down a treat. Ingredients for Two People

1 large chicken breast or 2 chicken fillets

3 tablespoons of rapeseed, groundnut or sunflower oil

2-3 medium potatoes

1 white onion

3 carrots cut into batons
-
100g peas (fresh or frozen)

3 slices of pineapple

Soy sauce, paprika, salt and pepper to taste
-
½ jar of sweet and sour sauce
How to Make This Air Fryer Chicken Breast Recipe
Using a Pyrex® mixing bowl with a lid, make a marinade for the chicken by coating it with oil, paprika, soy sauce, pepper and sliced onion. While it’s marinating, peel the potatoes and leave them to soak for 30 minutes in cold water. Dry them thoroughly and cut into even 1.5cm cubes. In a small bowl, toss them with a tablespoon of oil, salt and pepper.
Peel the carrots and cut into batons, then coat lightly with oil. Meanwhile, heat your air fryer to 190°C for 2 minutes. Place the potatoes in your Pyrex® air fryer dish and cook for 10 minutes, stirring halfway through.
Take out the dish with the pre-cooked potatoes. Put your marinated chicken in the centre and arrange the potatoes around it. Cook for another 10 minutes. Remove the chicken from the Pyrex® air fryer dish, add the carrots to the potatoes, then put the chicken back in and cook for 10-15 minutes. The chicken should now be cooked through.
Put the peas in a second 20 x 20cm Pyrex® air fryer dish with 1 tablespoon of water if frozen or 2 if fresh. Cover with foil and cook for 8-10 minutes. Then add them to the dish with the chicken and carrot-potato mixture, add the pineapple pieces, pour over the sweet and sour sauce and cook for a final 10 minutes. All that’s left is to serve.
