Peel the sweet potatoes and steam them.
Mash with a fork and season with salt and pepper.
Add the egg and stir.
Add the flour and parmesan and stir.
Shape into logs and cut into pieces. Use a fork to make small indentations on the top.
Put them in a pot of boiling water. The gnocchi are ready when they rise to the surface.
Preheat the oven to 180°c. Arrange the gnocchi in a baking dish and sprinkle with grated Gruyère. Cook for 10 to 15 minutes.
