Apple & Speculoos Cake

  • 1.5 apples
  • 50g speculoos biscuits
  • 1.5 eggs
  • 50g sugar
  • 50g plain flour
  • 1/2sachet baking powder (about 6g)
  • 100ml thick crème fraîche

Recipe

Stage 1

Preheat the oven to 180°C (fan).

Stage 2

Peel, core and slice the apples.

Stage 3

Whisk the eggs and sugar together until pale and fluffy.

Stage 4

Stir in the crème fraîche.

Stage 5

Fold in the flour, baking powder and crushed speculoos biscuits. Mix until smooth, but don't overwork it.

Stage 6

Pour the batter into a cake tin.

Stage 7

Arrange the apple slices on top and crumble a few extra speculoos biscuits over.

Stage 8

Bake for 35 to 45 minutes. Check with a knife - it should come out clean.
