Preheat your oven to 180°C (fan 160°C).
Slice the apples into very thin wedges.
Place the apple slices in a microwave-safe bowl with a splash of water, the juice of the lemon, and the blackberries.
Microwave for 2–3 minutes until the apples start to soften.
Gently crush the blackberries to release their colour, then microwave for another minute.
Cut the puff pastry sheets into strips about 5cm wide.
Spread a teaspoon of apple compote along each strip, then arrange the apple slices along the top half of the pastry.
Carefully roll each strip up to form a rose shape.
Place each rose into a muffin tin to help keep its shape while baking.
Bake for 30–40 minutes, until the pastry is puffed and golden.
