  • 250g canned chesnuts
  • 125g sugar
  • 50ml water
  • 1tsp vanilla extract
  • 4 eggs
  • 500g mascarpone
  • 300g chesnut cream

Stage 1

Make a syrup with water and sugar. Bring to the boil.

Stage 2

Add the chestnuts and vanilla extract, then simmer on low heat.

Stage 3

Blend the mixture until smooth and creamy.

Stage 4

Separate the egg whites from the yolks. Mix the yolks with the mascarpone, then add the chestnut cream.

Stage 5

Whisk the egg whites until stiff. Gently fold them into the previous mixture.

Stage 6

Spoon the mousse into small pots and chill.
