Mimosa asparagus

A springtime feast of tender green asparagus, accompanied by delicately cooked eggs, enhanced with a fragrant olive oil and vinegar vinaigrette. A delight.




  • 1 bunch of green asparagus
  • 2 eggs
  • 4 tablespoons of olive oil
  • 2 tablespoons of vinegar
  • 1/2 bunch of parsley
  • salt and pepper


Stage 1

Bring a large volume of water to the boil in a saucepan.

Stage 2

Wash and cut the ends (heels) of the asparagus. Place them in the steam basket. Add the two eggs, they will cook at the same time as the asparagus. Place the basket over the pot of boiling water and cook for 15 minutes.

Stage 3

Meanwhile, prepare the vinaigrette with the olive oil and vinegar.

Stage 4

Wash and chop the parsley.

Stage 5

When the eggs are cooked, run them under water and peel them. Mash them in a bowl.

Stage 6

Arrange the asparagus on a plate, sprinkle with eggs and vinaigrette.
