Summer salad with quinoa, grilled vegetables and feta

An explosion of Mediterranean flavors: soft quinoa, roasted vegetables, creamy feta, all enhanced by a touch of fresh mint. Deliciously irresistible!




  • 1 bag of quinoa
  • 1 zucchini
  • 1 pepper
  • cherry tomatoes
  • 1 eggplant
  • Feta cheese
  • Olive oil
  • salt and pepper
  • 1 bunch of mint


Stage 1

Preheat the oven to 180°c.

Stage 2

Wash and chop the vegetables, place them in a baking dish and drizzle with olive oil. Mix. Bake for 30 minutes.

Stage 3

For Meanwhile, cook the quinoa as indicated on the packet. Store in a cool place after cooking.

Stage 4

Put the quinoa in a bowl, add the grilled vegetables and crumble the feta. Season with salt and pepper. Add the oil olive.

Stage 5

Mix and chop a little mint.
