  • 250g chicken
  • 1 lemon(s) (zest and juice)
  • 1 garlic clove
  • 3 tbsp olive oil
  • salt and pepper
  • a few sprigs of thyme
  • a small piece of fresh ginger
  • cherry tomatoes
  • corn on the cob

Recipe

Stage 1

Soak wooden skewers in water for 1 hour to stop them burning.

Stage 2

Make the marinade: mix the lemon juice and zest with the garlic, olive oil, salt, pepper, thyme and grated ginger.

Stage 3

Cut the chicken into chunks and add to the marinade. Cover and leave in the fridge for 1 hour.

Stage 4

Thread a lemon wedge, a cherry tomato and a piece of chicken onto each skewer.

Stage 5

Cook the skewers in the air fryer at 180°C for 10 minutes.

Stage 6

Brush the corn cobs with a little olive oil. Pop them in the air fryer tray.

Stage 7

Cook the corn at 200°C for 20 minutes, turning every so often for an even char.
