  • 300g plain flour
  • 600ml milk
  • 3 eggs
  • 20g melted butter

Stage 1

Put the flour (and sugar and salt, if using) into a mixing bowl.

Stage 2

Add the eggs and whisk until smooth.

Stage 3

Gradually pour in the milk, whisking to avoid any lumps.

Stage 4

Stir in the melted butter.

Stage 5

Leave the batter to rest for 30 minutes if you can.

Stage 6

Heat a frying pan, add a little butter, and cook the crêpes until lightly golden on each side.
