  • 1 egg white
  • 50g icing sugar

Recipe

Stage 1

Carefully hollow out the clementines by cutting off the tops and using a spoon to remove the flesh.

Stage 2

Freeze the empty shells, their lids, and the pulp for at least 3 hours.

Stage 3

Blend the clementine pulp, then mix in icing sugar and whisked egg whites.

Stage 4

Remove the frozen clementine shells from the freezer and fill them with the mixture.

Stage 5

Return everything to the freezer until ready to serve.
