1.Preheat the oven to 210 °C.
2.Slice the courgettes and cut the onion into strips.
3.Place the courgettes, onion and tomatoes in the Pyrex® casserole dish. Drizzle with olive oil.
4.Place the chicken legs on top of the vegetables and cover with oil, then season with salt and pepper.
5.Add around 100 ml of water to the dish.
6.Place in the oven for 1 hour. Turn the chicken legs to brown and mix the vegetables while cooking.
