Ingredients
- 6 small hake fillets
- 2 courgettes
- 10 cherry tomatoes
- 1 lemon
- 2 tbsp chopped parsley
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper
Preparation
1.Preheat the oven to 180 °C.
2.Wash and slice the courgettes.
3.Cut the lemon in half: slice one half and cut the other half into two quarters, then halve the cherry tomatoes.
4.Place the sliced courgettes in the bottom of the Pyrex® casserole dish in two layers. Then add the lemon slices and the cherry tomatoes to the dish.
5.Pour over the lemon juice, olive oil, salt and pepper.
6.Cook the vegetables on their own for 30 minutes at 180°.
7.When the vegetables are cooked, add the hake pieces, then sprinkle with chopped parsley.
8.Put the lid on the casserole dish and place in the oven for 20 minutes at 180 °C.
