4 peppers, seeds removed and cut into large pieces
2 red onions, peeled and quartered
3 medium potatoes, washed and cut into 2cm dice
1 whole 390g chorizo sausage, sliced thickly
4 tomatoes, halved
2 tbs oil
Preparation
Preheat oven to 220 C. Put all of the vegetables, except the tomatoes into the Pyrex Irresistible Roaster and drizzle with oil.
Cook in the oven for 35-40 minutes, then turn the vegetables over, add the chorizo and tomatoes and cook for a further 15-20 minutes until lightly browned
