  • 10 Scallops
  • 2 oranges
  • 1 mandarin
  • Some coriander leaves
  • 50 g of butter
  • Salt and pepper


  1. Put the orange zest and take the suprêmes of the 2 oranges.

  2. Press the mandarin juice and the remaining juice at the center of the oranges.

  3. In a frying pan, melt the butter over low heat and add juices.

  4. Bring to a boil mixing time by time to reduce the sauce.

  5. Add the scalopps and make it fry 3 minutes on each side.

  6. Salt, add pepper and garnish with some coriander leaves.
