Ingredients
- 1 small pumpkin
- 1 butternut squash
- 2 red onions
- 4 potatoes
- Fresh goat’s cheese
- 1 tablespoon butter for the dish
- Olive oil
- 2 tablespoons of honey
- A pinch of cayenne pepper
- Aromatic herbs, salt, & pepper
Preparation
- Preheat the oven to 200°c, and butter the Pyrex® dish.
- Peel the ingredients, then chop the pumpkin, the butternut squash, the potatoes, and the onions into thin slices, using a mandolin or a knife.
- In the dish, aesthetically place your vegetable slices as tightly together as possible, before drizzling a generous amount of olive oil over the top. The olive oil will make your vegetables really melt in the mouth.
- Add the two tablespoons of honey on top, along with salt and pepper, a pinch of cayenne, and a further pinch of aromatic herbs.
- Put in the oven for 45 minutes at 200°c, when it’s take out, sprinkle a few crumbs for fresh goat’s cheese over the top – and enjoy!
