Preheat the oven to 180°c.
Steam the carrot tops. When they are cooked, squeeze out the water.
In a bowl, break the eggs, add the cream, salt and pepper. Add the cooked carrot tops and the chopped red onion.
Spread the shortcrust pastry in the mold, making holes with a fork.
Pour the mixture over the dough. Add the gruyere cheese on top and put in the oven for about 30 minutes.
