In a frying pan, heat a little oil.
Finely slice the onion and add it to the pan along with the clove of garlic.
Wash and dice the tomatoes and peppers.
Place everything in the pan. Season with salt and pepper.
Cover with water and let it simmer.
When ready to serve, crack the eggs into the pan and cover.
Sprinkle it with coriander.
