  • 4 carrots
  • 2tbsp curry powder
  • 1tbsp olive oil
  • Honey
  • Fresh goat cheese
  • Herbes de provence
  • 6 rice paper sheets
  • 2 eggs
  • salt and pepper

Recipe

Stage 1

Peel and slice the carrots into thin strips using a vegetable peeler.

Stage 2

Place them in a bowl and season with olive oil, curry powder, salt, pepper, and a drizzle of honey. Set aside.

Stage 3

In a separate bowl, mix the fresh goat cheese with the herbes de Provence, salt, and pepper. Set aside.

Stage 4

Beat the 2 eggs with salt and pepper in a large plate.

Stage 5

Quickly dip the rice paper sheets, one at a time.

Stage 6

Layer 3 sheets on top of each other.

Stage 7

Spread the goat cheese mixture and add the carrots. Fold in the edges of the rice paper.

Stage 8

Bake for about 30 minutes at 180°C. Sprinkle with parsley.
