+Bring water to a boil in a saucepan.
Trim the green parts of the leeks (the greens can be used in a soup) and cut the white parts of the leeks in half.
Place the eggs in the boiling water and cook for 10 minutes.
Put the leeks in a steaming basket and place it over the saucepan, cover.
Mix all the ingredients to make the miso dressing, adding water if needed.
Rinse the eggs under cold water and peel them.
Arrange the leeks on a plate. Crumble the eggs on top and add the miso sauce.
Sprinkle with parsley.
