  • 1 cucumber
  • 1 red onion
  • 1 red bell pepper
  • 150g Kalamata olives
  • olive oil
  • 1tsp mustard
  • 1tsp oregano
  • lemon

    Stage 1

    Preheat the oven to 180°C (356°F).

    Stage 2

    Place the chopped bell pepper on a baking tray, brush with olive oil, and roast for about 15 minutes.

    Stage 3

    Slice the cucumber into rounds, then into half-moons. Slice the red onion into thin rounds.

    Stage 4

    Combine everything in a dish, add the roasted peppers, Kalamata olives, feta cheese, and drizzle with the dressing. Enjoy!
