Ingredients

- 200g of grated carrots
- 2 eggs
- 120ml of sunflower oil
- 80g of brown sugar
- 150g flour
- 1tsp of baking powder
- A pinch of salt
- 1tsp of ground cinnamon
- 1tsp of mixed spice for gingerbread
- 100g of walnuts
- 150g of cream cheese
- 50g of icing susgar
- Colored fondant to shape the carrots
Recipe
Stage 1
Preheat the oven to 175°C
Stage 2
Wash, peel, and grate the carrots. Set aside.
Stage 3
In a bowl, mix the eggs, sugar, and oil.
Stage 4
Add the flour, baking powder, a pinch of salt, and the spices. Mix well.
Stage 5
Add the grated carrots and walnuts. Mix again.
Stage 6
Place in the oven for 45 minutes (cooking time may vary depending on your oven);check the doneness by inserting a knife into the center.
Stage 7
Mix the Philadelphia cream cheese with the icing sugar.
Stage 8
Once the cake is cooled, spread the icing on top.
Stage 9
Shape carrots using colored fondant and decorate the cake.
