An artisanal focaccia, topped with olive oil, flavored with rosemary, crispy on the outside, soft on the inside. An ode to Italy.

  • 500g of flour
  • 10g of fresh yeast or 6 g of baker's yeast
  • 400mL of water
  • 10g of salt
  • 1 tablespoon of sugar
  • olive oil
  • Rosemary

Recipe

Stage 1

Put the flour, crumbled yeast, sugar and 350 ml of water in a bowl

Stage 2

Mix with a large spoon

Stage 3

Add 2 tablespoons of olive oil and the salt

Stage 4

A using a large spoon, fold the edges of the dough towards the center

Stage 5

Cover and let rise at room temperature for 30min

Stage 6

Still using a large spoon, delicately fold the edges of the dough towards the center.

Stage 7

Cover and let rise for another hour

Stage 8

Put a little olive oil on your hands and lightly knead the dough. Always fold the sides towards the center.

Stage 9

Put a little of olive oil on a baking sheet. Place the dough on it and fold the dough on itself. Put a little olive oil on it.

Stage 10

Cover and let rise for 40 minutes.
