Smashed potatoes with garlic sauce

  • 1 sweet potato
  • new potatoes
  • herbes de Provence
  • olive oil
  • salt
  • pepper
  • 1 pot of Greek yoghurt
  • 1 clove of garlic
  • ½ lemon
  • parsley

Stage 1

Preheat the oven to 180°C (350°F).

Stage 2

Wash and peel the sweet potato, then slice it into rounds and halve each round.

Stage 3

Boil the sweet potato slices in water for 10 minutes.

Stage 4

Meanwhile, boil the new potatoes in water for 10 minutes.

Stage 5

Place the cooked potatoes and sweet potato slices on a baking tray. Use the back of a ramekin or a flat-bottomed cup to press down and flatten the potatoes and sweet potatoes.

Stage 6

Season with salt and pepper, add Herbes de Provence, brush with olive oil, and bake in the oven for 20 minutes.

Stage 7

Peel and grate the garlic clove. Add it to the yoghurt along with the juice of half a lemon and finely chopped parsley. Mix well.

Stage 8

Serve the smashed potatoes with the garlic sauce
