Carrot Top Pesto
- 160g carrot tops
- 100g pine nuts
- 100g parmesan
- Lemon juice
- Salt & pepper
- 4 cloves of garlic
- 200g olive oil
- Mix all the ingredients together in a blender: carrot tops, peeled and finely chopped garlic cloves, Parmesan cheese, pine nuts, lemon juice, and olive oil.
- Scrape the sides several times to get it all out.
- Season well with salt & pepper. It’s ready – enjoy!
