  • 2 tsp sweet smoked paprika
  • 1 tsp chilli flakes
  • 4 cloves garlic, crushed
  • Juice and zest of 1 lemon
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Sea salt and black pepper
  • 4 chicken thighs, skin on
  • 4 chicken drumsticks, skin on
  • 1 red pepper, deseeded and quartered
  • 1 yellow pepper, deseeded and quartered
  • 1 red onion, peeled and cut into wedges


    1. Combine all of the ingredients in a Pyrex dish, cover and place in the fridge to marinate for at least an hour or overnight if possible.
    2. Preheat the oven to 220°C/425°F/gas mark 7. Cook in the oven for 20 minutes then turn the heat down to 180°C/350°F/gas mark 4 and cook for a further 20 minutes or until the chicken is cooked through.
    3. Serve with potato wedges or chips and a simple green salad.
